Mediterranean Marinated Balsamic Pork Loin Skillet
Ingredients
  • subheading: For the Marinade:
  • 1 lb pork tenderloin (sliced ⅓ to ½ in thick)
  • ¼ c balsamic vinegar
  • ¼ to ⅓ c olive oil or avocado oil
  • ½ tsp smoked paprika or regular paprika
  • 1 tbsp honey (optional)
  • ½ tsp minced garlic
  • ¼ tsp salt/pepper
  • ¼ tsp oregano
  • Optional ¼ tsp dried marjoram or rosemary
  • subheading: For the skillet after pork marinades:
  • ¾ to 1 c sliced red onion
  • 2 oz sliced olives
  • 1 zucchini, thinly sliced sliced
  • Fresh basil
  • Salt/pepper if desired
  • Extra paprika to garnish or red pepper flakes
