Fried Chicken Tenders (Gluten Free, Soy Free, Dairy Free, Sugar Free)
Ingredients
  • 3 to 4 chicken breasts (cut in strips)
  • ½ cup THM Baking Blend
  • generous pinch of sea salt
  • a few grinds of cracked pepper
  • egg whites from two eggs or ¼ or so of carton egg whites
  • 1 tsp of Cajun Seasonings (optional, but so very good)

  • You could use another spice in the place of the Cajun seasonings.  Perhaps you want an Italian flare!  You can use Italian seasonings.  You could leave it out all together and just have a basic breading.  I really loved the Cajun flavoring.  It wasn’t overwhelming, but gave a very lovely kick to the chicken. I hope you’ll give it a shot.    If you don’t have an allergy to dairy, you could use some parm cheese in your dry mix.
