Cheesy Quinoa Veggie Bake
Ingredients
  • 4 pieces toasted bread, blended for bread crumbs
  • 3 cups rinsed Quinoa, cooked in 6 cups water
  • Bag frozen peas
  • Cheese sauce: 3 to 4 cooked russet potatoes
  • 2 onion rough chopped
  • 6 cloves garlic rough chopped
  • Sauté in water or broth
  • 2 tablespoon miso
  • ⅔ nutritional yeast
  • 2 teaspoon crushed red pepper(optional)
  • 2 teaspoons paprika
  • 1 teaspoon pepper
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • ½ teaspoon curry powder
  • 1 cup veggie stock
  • Add some cashews if you want it creamier and richer
  • Pour cheese sauce into sautéed onions and garlic to just heat up a bit. Add another cup of veggie broth to make casserole more moist. Blend.
  • subheading: In a large bowl:
  • Chop 3 to 4 cups broccoli
  • 3 to 4 stems of kale chopped
  • ½ pound cooked black beans
  • Cooked quinoa
  • Peas
