Panang Curry with Chicken

Ingredients
  • 1 lb chicken breasts or thighs, cubed
  • Panang Sauce
  • 1 onion, sliced
  • 1 Red Pepper, sliced
  • 1 cup Green Beans
  • Jasmine Rice
Steps
  1. Sauté chicken in a little EVOO or whatever you normally use - we always use boneless, skinless breasts but most make with thighs.
  2. Remove browned chicken from inner pot.
  3. Add a bit more oil and add sliced onion.
  4. Add chicken back in.
  5. Add sauce, stir to coat chicken and onion.
  6. Manual 3 minutes, NR for 5 minutes then QR.
  7. Turn sauté feature on.
  8. Stir in red pepper and green beans and cook while sauce simmers. (I put in with the chicken but it was over cooked so will add after next time.)
  9. Serve with rice.
