Instant Pot Salmon and Veggies by Rich Lum
Breakfast..Lunch or Dinner idea cooked in a 6qt IP
Veggies cooked Pot in Pot (pip) at the same time as the salmon
Ingredients
  • 1 frozen 5 to 7 ounce Salmon filet
  • Chopped and sliced veggies..your choice.. I used carrots, celery, cabbage, onion and broccoli
  • Mc Cormick Cedar Plank Salmon Seasoning ( Costco ) or use your favorite seasonings
  • ¼ cup dry sherry...you can sub with a ¼ cup water and a ½ teaspoon of chicken Better than Buillon
  • Salt and pepper to taste
Steps
  1. Chop and slice your veggies
  2. Add your veggies to a 7x3" round cake pan,  Season with salt and pepper and add the dry sherry
  3. Cover your pan tightly with foil
  4. Add 1 cup of water to your pot, put the trivet in with the pan on top then lay a second trivet on it with the salmon on top
  5. Close and seal your lid
  6. Set pot to manual 4 to 5  minutes
  7. Quick release the pressure when the pot beeps
Notes
  • Flavor the veggies any way you like.
  • I also use a 6" square pan or a 7.75" loaf pan to cook the veggies pip
