Ingredients
- ½ large sweet onion, chopped
- 4 to 5 stalks of celery, chopped
- carrots, chopped (I cut up baby carrots)
- 1 Bag of Cabbage, shredded with carrots
- 4 C Chicken Broth
- 16 oz V8 Juice
- 2 to 4 Garlic Cloves, minced
- 1 T Olive Oil
- 1 Can Great Northern Beans, lightly drained
- 2 to 3 Cups Chicken, chopped (optional)
- 1 Can Rotel Tomatoes, mild
- 1 lb Cooked link sausage (I like skinless turkey sausage, low sodium if available)
- 1 T Dried Parsley
- 1 tsp Dried Oregano
- 1 tsp Dried Basil
Steps
- In a big pot add olive oil and sauté onions 3 minutes, then add garlic and sauté 2 minutes being careful to not burn the garlic. Add the chopped celery and carrots and sauté for 4 minutes. Add cabbage mixture. Sauté and stir a few minutes (3-ish). Add broth, V8 juice, tomatoes, beans, chicken, and sausage.
- Simmer covered on stove for 45 to 50 min.
- Add more spices or broth as needed.
