Debbie's Cabbage Soup

Ingredients
  • ½ large sweet onion, chopped
  • 4 to 5 stalks of celery, chopped
  • carrots, chopped (I cut up baby carrots)
  • 1 Bag of Cabbage, shredded with carrots
  • 4 C Chicken Broth
  • 16 oz V8 Juice
  • 2 to 4 Garlic Cloves, minced
  • 1 T Olive Oil
  • 1 Can Great Northern Beans, lightly drained
  • 2 to 3 Cups Chicken, chopped (optional)
  • 1 Can Rotel Tomatoes, mild
  • 1 lb Cooked link sausage (I like skinless turkey sausage, low sodium if available)
  • 1 T Dried Parsley
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
Steps
  1. In a big pot add olive oil and sauté onions 3 minutes, then add garlic and sauté 2 minutes being careful to not burn the garlic. Add the chopped celery and carrots and sauté for 4 minutes. Add cabbage mixture. Sauté and stir a few minutes (3-ish). Add broth, V8 juice, tomatoes, beans, chicken, and sausage.
  2. Simmer covered on stove for 45 to 50 min.
  3. Add more spices or broth as needed.
