Red beans and sausage canning
Ingredients
  • Red Beans and Sausage for Red Beans and Rice
  • This is a per jar recipe using quart jars.
  • subheading: Layer Per Jar:
  • ⅓ cup red beans, washed and soaked for 3 hours
  • 1 andouille sausage (about the size of a hot dog) cut into thin slices
  • ⅓ cup chopped onions
  • ⅓ cup chopped celery
  • ¼ cup chopped green bell pepper
  • 1 minced clove garlic per jar
  • 2 teaspoons (or to taste) creole or cajun seasoning
  • pinch of cayenne pepper
  • salt and pepper to taste
  • water or chicken broth to fill the jar
  • Pressure can at 11 lbs PSI or 10 lbs of pressure for 90 minutes (or for your altitude).
  • Cajun Spice Mix
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 ½ teaspoons paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 ¼ teaspoons dried oregano
  • 1 ¼ teaspoons dried thyme
  • ½ teaspoon red pepper flakes
  • throw in your rice and this is soooo good!
