Hash Brown Quiche/Frittata Cups
We made these for our mother's brunch. We doubled the recipe and they still disappeared. It was nice to use fresh chives from the garden.
Ingredients
  • 1 large egg
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 cups frozen shredded hash brown potatoes, thawed
  • ¼ cup shredded Asiago cheese

  • 3 large eggs
  • 1 tablespoon minced fresh chives
  • ⅓ cup shredded Colby-Monterey Jack cheese
  • ⅓ cup fresh baby spinach, thinly sliced
  • 2 bacon strips, cooked and crumbled
