Seared Salmon & Quick-Pickled Cucumbers
Ingredients
  • 4 tablespoons your favorite TJ’s Extra Virgin Olive Oil
  • Zest and 1 tablespoon juice of a TJ’s Lemon, divided
  • 1 tablespoon TJ’s Ground Black Pepper
  • ⅓ cup TJ’s Organic Coconut Aminos Seasoning Sauce
  • 2 cloves TJ’s Garlic, peeled and finely minced
  • ¼ cup plus 1 tablespoon chopped TJs Fresh Dill, divided (reserve a few fronds for garnish)
  • 1 package (1¼ or 1½ pounds) TJ’s Boneless Skinless Fresh Atlantic Salmon Fillet, cut into 4 portions
  • ¾ package TJ’s Organic Persian Cucumbers
  • ¼ cup TJ’s Organic Apple Cider Vinegar
  • 2 tablespoons TJ’s Organic Cane Sugar
  • ½ teaspoon TJ’s Sea Salt
  • ¼ of a TJ’s Red Onion, very thinly sliced
  • 4 tablespoons TJ’s Unsalted Butter, cut into small cubes
  • TJ’s Frozen Brown or Jasmine Rice, cooked according to package directions
