One-Pan Sausage and Bean Stew with Crispy Hash Brown Topping
Ingredients

  • 400g beef sausages
  • 1 brown onion, finely chopped
  • 2 carrots, halved, sliced
  • 1 celery stalk, sliced
  • 1 tsp finely chopped fresh thyme leaves, plus extra sprigs to serve
  • 400g can diced tomatoes
  • 400g can cannellini beans, rinsed, drained
  • ¼ bunch kale, stems removed, leaves roughly chopped
  • ½ 750g packet frozen hash browns, thawed, chopped
  • Extra virgin olive oil spray
