One-Pot Mexican Style Quinoa
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • ½ cup diced sweet or yellow onion
  • 2 cloves garlic, minced
  • 1 cup dry quinoa, rinsed well
  • 1 (14.5 ounce) can diced tomatoes, (BPA-free brand Muir Glen)
  • 1 (4 ounce) can diced green chiles
  • 1 ½ cups vegetable broth, low-sodium
  • ¼ teaspoon black pepper
  • ½ teaspoon kosher or sea salt, more or less to taste
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • ½ cup freshly chopped cilantro for garish
