Slow Cooker Buffalo Chicken Noodle Soup

  • 1½ lbs boneless, skinless chicken breasts

  • 3 cloves garlic, minced
  • 1½ tablespoons dry ranch dressing mix
  • ½ cup Frank's buffalo sauce, plus more to taste
  • 6 cups low-sodium chicken broth
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons cornstarch
  • 2½ cups uncooked wide egg noodles
  • ¼ cup roughly chopped fresh parsley
  • Blue cheese crumbles, for serving (optional)
