Brown Butter Brussels Sprout and Bacon Ravioli

  • ¾ pound Brussels sprouts, thinly sliced
  • kosher salt and black pepper
  • 1 medium shallot, thinly sliced
  • 4 tablespoons salted butter
  • ½ cup toasted hazelnuts or pecans, roughly chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh thyme leaves
  • zest of 1 lemon
  • 1 pinch crushed red pepper flakes
  • ½ cup grated manchego or parmesan cheese
