  • 1 teaspoon fresh lime juice, lemon juice, or white vinegar
  • 3 tablespoon fish sauce
  • 2 teaspoon light soy sauce
  • 2 scallions, thinly sliced
  • ¼ cup unsalted roasted peanuts, chopped
  • 12 Bibb or Boston lettuce leaves
  • ¾ cup peeled and julienned English cucumber, cut into 2-inch pieces
  • Fresh cilantro leaves
  • Hot cooked jasmine rice (optional)
