  • ½ cup julienned  sundried tomatoes in oil
  • 1 small onion, cut into thin slices,
  • 4 cloves garlic, minced
  • crushed red pepper flakes, to taste
  • 1 cup low-sodium  chicken broth
  • ½ cup ricotta cheese or sour cream
  • ¼ to ⅓ cup grated Parmesan cheese, plus more for serving
  • 1 tablespoon butter (optional)
