Ingredients
- 1 ½ cups (192g) spelt flour (*SEE NOTES AT VERY BOTTOM FOR SUBS!*)
- ¼ cup (40g) brown rice flour
- 2 TAB (16g) cornstarch
- 2 teaspoons baking soda
- 4 teaspoons gingerbread spice (SEE NOTES AT BOTTOM)
- ½ teaspoon fine sea salt
- ¾ cup (240g) pure maple syrup, room temp
- 1 cup (240g) applesauce, room temp
- ¼ cup (80g) unsulphured molasses (do not use blackstrap or sub!)
- 2 TAB (30g) HOT water
- Molasses & applesauce are magical for flavor & moisture & CAN'T be subbed or cake will NOT be moist.
