Vegan Gingerbread Cake
Ingredients
  • 1 ½ cups (192g) spelt flour (*SEE NOTES AT VERY BOTTOM FOR SUBS!*)
  • ¼ cup (40g) brown rice flour
  • 2 TAB (16g) cornstarch
  • 2 teaspoons baking soda
  • 4 teaspoons gingerbread spice (SEE NOTES AT BOTTOM)
  •  
  • ½ teaspoon fine sea salt
  •  
  • ¾ cup (240g) pure maple syrup, room temp
  • 1 cup (240g) applesauce, room temp
  • ¼ cup (80g) unsulphured molasses (do not use blackstrap or sub!)
  • 2 TAB (30g) HOT water
  •  
  • Molasses & applesauce are magical for flavor & moisture & CAN'T be subbed or cake will NOT be moist.
