Southwestern Pulled Chicken with Cilantro Lime Slaw
Ingredients
  • 2 pounds boneless skinless chicken thighs
  • 1 large onion, chopped (about 1 ¼ cups)
  • 14 ½ ounces tomato puree or strained tomatoes
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon liquid hickory smoke
  • 3 garlic cloves, minced
  • 3 tablespoons coconut sugar
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 dried chipotle pepper, rehydrated and de-seeded
  • 6 Grain-Free Sandwich Rolls, sliced in half and toasted
  • 1 ½ avocados, peeled, pitted, and thinly sliced

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons honey
  • 1 teaspoon chili powder
  • ⅛ teaspoon sea salt
  • 3 cups green cabbage, finely shredded (about ¼ of a large head or ½ pound)
  • 1 large carrot, peeled and grated (about 1 cup)
  • ¼ cup cilantro, finely chopped
