Harissa Lamb and Goat's Cheese Potato Salad
Ingredients
  • 300g new potatoes, halved
  • 10g pine nuts
  • 200g extra lean diced lamb
  • 4 tsp harissa paste
  • 1 small red onion, peeled and finely sliced
  • 2 roasted red peppers, thinly sliced width ways
  • 1 lemon, halved
  • Mixed salad leaves, roughly shredded
  • Handful of fresh parsley and mint, roughly chopped
  • 2 tbsp pomegranate seeds
  • 48g goat’s cheese, chopped into small pieces
  • 1 tbsp fat free Greek yoghurt
