Diep Tran's Creamy White Beans in Lemongrass Coconut Broth
Ingredients
  • subheading: Rempah (Spice Paste):
  • 3 stalks lemongrass
  • ½ ounce galangal
  • ½ ounce turmeric root, roughly chopped (or ½ tablespoon turmeric powder)
  • ½ cup whole garlic, peeled and roughly chopped (about 1 whole garlic bulb)
  • ¼ pound shallots, peeled and roughly chopped (2 to 3 large bulbs)
  • 4 to 8 Thai bird’s eye chiles
  • 5 tablespoons neutral oil, divided
  • subheading: Beans in Broth:
  • 1 ½ cups dried white beans (like Ayocote Blanco or Mayocoba), soaked overnight then drained (see Note)
  • 2 cups water
  • 1 tablespoon Diamond Crystal kosher salt, plus more if needed
  • 1 ½ tablespoons palm sugar, or demerara sugar
  • 2 cups coconut milk
  • 5 makrut lime leaves
  • subheading: Garnish:
  • ¼ medium red onion, thinly sliced
  • 1 bunch rau ram or Thai basil, chopped
  • Cooked rice or rice crackers/tortillas, for serving
