Moroccan Tagine Recipe with Quorn Pieces
Ingredients
  • 350g Quorn Pieces
  • 1 tbsp olive oil
  • 1 red onion, thinly sliced
  • 2 garlic cloves, crushed or finely chopped
  • ½ tsp ground cumin
  • 1 to 2 heaped tbsp harissa, depending on how hot you like your food
  • 75g dried apricots, roughly chopped
  • 400g tin chopped tomatoes
  • 1 yellow pepper, de-seeded and roughly chopped
  • 1 red pepper, de-seeded and roughly chopped
  • 400ml boiling vegetable stock
  • 400g tin chickpeas, drained
  • 125g cherry tomatoes, sliced in half
  • salt and freshly ground black pepper
  • 2 tbsp roughly chopped coriander, plus extra for garnishing
  • 200g couscous to serve
  • ½ tsp salt
  • 1 tbsp olive oil
  • 200ml boiling water
