Ingredients
  • 2 lbs. beef chuck roast
  • 2 Tbsp. olive oil
  • 1 package dry onion soup
  • 2 C beef broth
  • 1½ C shredded sharp cheddar
  • 6 sandwich or Hoagie rolls, large
Steps
  1. Using Sauté function, warm up IP insert until the front says "Hot".
  2. Cut the roast in half and place into the Instant Pot.
  3. Put in the olive oil and sauté until each side is browned (3 to 4 min) then remove roast.
  4. Pour in ½ C of the broth and then using a wooden spatula, deglaze the IP insert.
  5. Put the roast back into the Instant Pot.
  6. Sprinkle the onion soup on top of roast.
  7. Pour in the broth.
  8. Cover the Instant Pot and secure the lid. Set valve to sealing.
  9. Set the manual pressure cook button to 60 minutes.
  10. Perform a full NPR.
  11. Remove the lid and place beef on a cutting board. Shred. Return shredded meat to juices in the Instant Pot.
  12. Under the broiler, toast the buns.
  13. Pile beef on top of the buns and then top with ¼ C of cheddar on each one. Place under the broiler for one more minute, until cheddar is melted.
