  2. Amish Haystacks have layers that is piled onto your plate. This recipe also includes rice and is topped off with a delicious cheese sauce.

  5. Taco Meat
  6. 1 lb. hamburger
  7. 1 clove minced garlic optional
  8. 3 Tbs. taco seasoning (1 packet)
  9. 1 c. tomato juice or water
  10. Rice
  11. 1 c. uncooked rice
  12. 1 Tbs. oil
  13. 2 c. water
  14. ¾ tsp. salt
  15. Beans
  16. 1 can red beans
  17. 1 Tbs. taco seasoning
  18. Cheese sauce
  19. ½ c. milk
  20. 10 oz. velveeta cheese, cut into slices (about 2" - 3" chunk from the 2 lb. block)
  21. Guacamole
  22. 2 ripe avocados, mashed
  23. 1 Tbs. lime juice
  24. ¼ tsp. salt
  25. Remaining Ingredients
  26. 1 qt. shredded lettuce
  27. 1 large tomato, diced
  28. 3 stems green onions, chopped
  29. ½ bag Doritos or tortilla chips slightly crushed
  30. sour cream
  31. salsa
  32. hot sauce
  33. INSTRUCTIONS
  34. Crumble and brown the hamburger, drain the fat. Add 1 clove of minced garlic, taco seasoning, and tomato juice. Cook for at least another minute.
  35. Cook 1 c. of rice in your rice cooker or in a saucepan on the stove-top. Add the oil to a saucepan over medium-high heat. Stir in the rice kernels, add water and bring to a rolling boil. Reduce heat to low temperature. Cover and set your timer for twenty minutes. Do not open the lid until your timer goes off.
  36. Warm a can of beans and add 1 Tbs. taco seasoning.
  37. You can buy a can of cheese sauce and warm it, or make your own. In a microwave-safe dish, add milk and cheese slices. Warm at one-minute intervals, stirring in-between, until it is melted and smooth.
  38. You can buy ready-made guacamole, or make your own. By simply mashing the avocados with a fork, add salt and lime juice.
  39. Arrange all your ingredients in the order you want to stack them, and let everyone pile their plates full. Usually, the cheese sauce gets drizzled over the top of the stack.
  40. NOTES
  41. You can add or subtract any ingredients you want. You can add jalapenos too.
  42. A lot of people use regular onions instead of green.
  43. Sometimes I don't have everything on hand and that's ok, as long as I have all the main ingredients.
  44. Some people use crushed crackers instead of chips.
  45. Some even substitute the cheese sauce for shredded cheese and drizzle Ranch or Thousand Island dressing on top.
  46. It is a very versatile recipe, so have fun with it.
