  • ¼ cup ( 50g) granulated sugar, divided
  • 4 Tablespoons ( ¼ cup; 56g) unsalted butter, softened to room temperature and cut in 4 pieces
  • 3 cups ( 390g) bread flour ( spooned & leveled), plus more as needed
  • 1 teaspoon salt

  • 1 egg white, beaten
  • ¼ cup ( 50g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 Tablespoon ( 14g) unsalted butter, melted
