Ingredients
  • 2 sweet potatoes, peeled and cut into 1 inch pieces
  • 2 large leeks, white and pale green parts only, cut lengthwise and washed thoroughly, then cut into ½ inch slices
  • 1 cup water
  • 1 tablespoon Dr. Fuhrman's MatoZest or other no-salt seasoning, adjusted to taste
  • 1 pound asparagus, trimmed, then cut diagonally into 2 inch pieces
  • ½ pound shiitake or baby bella mushrooms, sliced
  • ½ lemon, juiced
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • freshly ground black pepper, to taste
