used 1 tsp salt , and 85 gr butter unsalted....kneaded long time, did bring it together without adding flour... weighed all ingredients....made March 22 2024.....added zest on one orange and one lemon. also had med eggs, so beat into jigger and put in two and one more yolk which came to 8 tbsp...

1 cup lukewarm whole milk (about 100°F/240ml)

½ cup plus 1 teaspoon granulated sugar divided (105g)

1 packet active dry yeast (2¼ teaspoons/0.25-ounce/7g)

4½ cups all-purpose flour plus additional for dusting (540g)

2 teaspoons salt

2 large eggs beaten

⅓ cup unsalted butter cubed and at room temperature (76g)

subheading: Topping:

4 to 6 large eggs uncooked and dyed with food coloring (see Notes)

1 large egg plus 1 teaspoon water beaten

sprinkles optional
