Easy Huevos Rancheros
Ingredients
  • 1 can diced tomatoes, drained 796 mL
  • ¼ tsp ground cumin 1 mL
  • ½ tsp hot sauce 2 mL

  • 1 can red or black refried beans 398 mL
  • 2 tsp vegetable oil (approx.) 10 mL
  • 8 Omega 3 eggs
  • ¼ cup shredded Cheddar and part skim mozzarella cheese 60 mL
  • 1 ripe avocado, peeled and diced
  • ½ cup fresh cilantro, chopped 125 mL
  • lime wedges, for garnish
  • Multigrain with Flax Tortilla Chips, optional
