Five Delicious Potato Recipes
Ingredients
  • 30g ghee or butter
  • 1 tbsp vegetable or sunflower oil, plus an extra litre or so for deep-frying
  • 1 onion, finely diced
  • 2 garlic cloves, finely chopped
  • 2.5cm piece of fresh root ginger, finely chopped
  • 300g waxy potatoes, peeled and cut into 1cm dice
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp black mustard seeds
  • 1 tsp carom seeds (available in larger supermarkets)
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 125g frozen peas
  • Small bunch of coriander, roughly chopped
  • A squeeze of lemon juice
  • Sea salt and freshly ground black pepper
  • 12 samosa wrappers (25cm x 8cm)
  • Mint raita, to serve (optional)
