Grandma Mary's Spaghetti Sauce
Ingredients
  • 1 lb pork, like boneless country spare ribs
  • 1 can (12 oz) tomato paste
  • 2 T salt
  • pepper to taste
  • 2 T Italian parsley
  • 2 bay leaves
  • 1 to 2 celery stalks, broken in half
  • 4 cinnamon cloves
  • 2 garlic cloves, minced
  • 2 to 3 dashes of cinnamon
  • 2 C of water for every 6 oz of tomato paste
  • 2 C chicken broth
  • 2 C red wine
  • 1 onion, chopped
Steps
  1. Brown pork with 1 T of butter & 1 T oil then remove.
  2. Add onion until translucent.
  3. Now add garlic & brown.
  4. Transfer all ingredients to a large pot, bring to a boil & simmer til desired thickness.
Notes
  • I double this recipe
  • Remember to fish out cinnamon cloves, celery & bay leaves before serving.
  • Simmer most of the day. I add fluid (usually water) & cook down more.
  • Freezes easily
