Ingredients

  • Borgotaro dried porcini mushrooms, 150g/5.25 oz
  • Extra virgin olive oil, 3 Tbsp
  • Yellow onion, ¾ cup, finely diced
  • Garlic clove, peeled and left whole
  • Dry white wine 120ml / ½ cup
  • Vacche Rosse cheese rinds
  • Fine sea salt
  • Black pepper
  • Fresh parsley, 1 cup, finely chopped
