Ashley Capps' Pumpkin Crème Caramel
Ingredients

  • 4 cardamom pods, crushed
  • 2 bay leaves
  • 2 cinnamon sticks
  • 2-inch piece of fresh ginger, thinly sliced
  • 1 star anise
  • ¼ teaspoon freshly grated nutmeg
  • 4 large eggs
  • 2 large egg yolks
  • ⅓ cup granulated sugar
  • 3 tablespoons firmly packed brown sugar

  • 2 tablespoons water
  • ⅓ cup granulated sugar
  • 1 tablespoon lemon juice or distilled white vinegar
