Pappardelle with Roasted Butternut Squash and Tomato Ragu
Ingredients

  • 1 pound ground spicy Italian sausage
  • ½ sweet onion, chopped

  • 1 ½ cups cubed butternut squash
  • 1 can (28 ounce) San Marzano tomatoes
  • ½ cup red wine
  • 1 bay leaf
  • 4 fresh sage leaves
  • 2 fresh thyme sprigs
  • 4 tablespoons butter
  • 1 pound Pappardelle or your favorite cut of pasta
  • burrata cheese and parmesan cheese, for serving
