CREAMY MUSTARD CHICKEN TRAY BAKE
Ingredients
  • A lovely creamy tray bake, you can use any cut of chicken, Maryland, thighs, breast or tenders. ( I used tenders for that’s what I had in my freezer and it’s use it up freezer, pantry and garden clean out over the next few months. Or if your on a tight budget give chicken drumsticks a go, just brown chicken on both sides.
  • 8 chicken tenders OR 6 chicken thigh fillets, skin on or off
  • 1 x 250g pkt bacon rashers, diced
  • 1 onion, peeled and cut into wedges
  • 3 clove garlic finely diced
  • 2 large carrots sliced chunky
  • 4 potatoes chopped chunky
  • 1 sweet potato peeled and chopped
  • ½ cup of chicken stock
  • 300ml cream or evaporated milk
  • 2 to 3 tablespoons Dijon mustard (adjust to your own taste )
  • 1 teaspoon chicken stock powder
  • Sea Salt and cracked pepper for seasoning
