Thai Coconut Red Curry Salmon
Ingredients
  • 2 tbsp coconut oil
  • ½ cup Thai red curry paste
  • 1 Shallot (Finely chopped)
  • 2 kaffir lime leaves (very very finely sliced)
  • A few Thai basil leaves
  • 1 tablespoon finely grated ginger
  • 2 tbsp lime juice
  • 1 tsp fish sauce
  • 2 cups (500ml) coconut milk
  • 1 tbsp soy sauce
  • 21oz- 600g skinless salmon fillet, cut into 8 pieces
  • 6oz - 170g snow peas (mange tout), trimmed and halved lengthways
