Ingredients

  • 2 cups all-purpose flour ( spoon & leveled)
  • 1 tsp baking soda
  • 1½ tsp ground ginger
  • 1½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • ¾ cup unsulphured molasses (I use Grandma’s Molasses brand)
  • ¾ cup hot water (about 100°F (38°C))
  • ½ cup unsalted butter, softened
  • ⅓ cup packed brown sugar
  • 1 large egg, at room temperature
  • 1 tsp pure vanilla extract

  • subheading: Cream Cheese Frosting:
  • 8 oz full-fat brick style cream cheese, softened to room temperature
  • 2 Tbsp unsalted butter, softened to room temperature
  • 1¾ cups confectioners’ sugar
  • 1 Tbsp cream or milk
  • 1 tsp pure vanilla extract
  • optional: ½ tsp maple extract or 2 Tbsp pure maple syrup
  • optional: cranberries for garnish
