Citrus Olive Oil Cake Topped with a Citrus Cream
Ingredients
  • 1&½ cup All purpose flour
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 2 large eggs
  • ¾ cup Extra Virgin Olive Oil
  • ½ cup plain yogurt
  • ⅓ cup of orange juice
  • 2 tbps orange zest
  • 1 cup sugar
  • Pinch of salt
  • 2 tsp Vanilla paste or extract if you have orange extract, you can use that too.
  • subheading: Citrus Curd:
  • 2 eggs
  • 2 egg yolks
  • ¾ cup sugar ( if you want the curd to be less sweet, reduce to ½ cup)
  • ½ cup orange juice
  • 1 tbsp orange zest
  • 2 tbsp lemon juice
  • 1 tsp of cornstarch
  • 2 tbsp unsalted butter
  • pinch of salt
  • ½ tsp orange extract optional
  • subheading: Whipped Cream:
  • 1 &¼ cup heavy whipping cream
  • ⅓ cup of powdered sugar
  • 1 tsp vanilla paste or orange extract
