Aubergine with Tahini, Yogurt and Pickled Radish
Ingredients
  • 1 large aubergine, cut into rings 1.5cm thick
  • fine cooking salt
  • 2 tbsp olive oil
  • 4 tbsp Greek yogurt
  • 2 tsp tahini
  • squeeze fresh lemon to taste
  • sea salt and black pepper
  • small clove garlic crushed
  • 2 tbsp coriander, chopped
  • subheading: For the pickled radish:
  • small bunch of radish, washed and thinly sliced
  • 250 ml white wine vinegar
  • 100 ml water
  • 1 tsp fine cooking salt
  • 1 tbsp white sugar
