Seitan and Vegetable Stir Fry
Ingredients

  • 2 small onion (thinly sliced into half moons)
  • 2 red bell pepper (sliced into strips)
  • 10 shiitake mushrooms or button mushrooms (sliced bite size)
  • 8 ounce baby spinach
  • Sauce
  • ½ cup vegetable stock
  • 4 tablespoon dark soy sauce
  • 2 tablespoon shaoxing wine or dry sherry
  • 4 teaspoon rice vinegar
  • 2 teaspoon granulated sugar
  • 4 teaspoon sesame oil
  • 3 teaspoon cornstarch
