Cheesy Wild-Rice-Stuffed Peppers
Ingredients
  • 6 green, red, orange, and/or yellow bell peppers, tops removed and seeded
  • 2 tablespoons olive oil
  • ½ yellow or red onion, diced
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 2 teaspoons minced garlic
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 2 cups cooked wild rice
  • 1 14-ounce can diced tomatoes, drained
  • 2 tablespoons tomato paste
  • ½ teaspoon dried tarragon leaves
  • Salt and pepper, to taste
  • 1 cup fresh baby spinach
  • 1 cup shredded parmesan cheese, divided
  • ½ cup shredded mozzarella cheese
  • 1 8-ounce can tomato sauce
