Vegan Tahini Caesar Dressing & Crunchy Chickpea Croutons

Ingredients

  • 2 T tahini
  • 3 T nutritional yeast
  • 1 t garlic
  • 1 t dijon mustard
  • ¼ t salt
  • ¼ C water
  •

  • black pepper dash

  • This gives a thicker dressing with less fat/calories per serving from tahini.

  • Recipe adapted from PlantPure Chef. Spice choices are opt. but they do help flavor & create a crunchy consistency.

  • 3 cups chickpeas - drain but don’t rinse
  • 2 TAB lime/lemon juice or 1 Tab AC Vinegar
  • 1 tsp garlic powder
  • 1 tsp onion
  • ½ tsp turmeric
  • ½ tsp smoked paprika
  • ½ tsp chili lime seasoning (Trader Joe's)
  • 1 TAB Nutritional yeast
  • ¼ tsp salt
