Spicy Black Bean Soup (20 Min, Vegan)
Ingredients
  • 1 tbsp olive oil
  • ½ onion
  • 2 cloves garlic
  • 1 bell pepper, red
  • 1 can black beans (1 can = 15.5oz)
  • 250 ml vegetable broth
  • ⅕ cup cilantro/coriander, fresh
  • 1.5 tsp cumin
  • ¼ tsp red pepper flakes (be careful not to make it too hot!!)
  • 1 tbsp balsamic vinegar
  • ½ avocado
  • subheading: Optional:
  • 2 tortillas
  • 1 slice cheddar cheese (only for those who are not vegan)
