  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 2 ½ cups vegetable broth
  • 1 (12-ounce) bottle ale (optional, can be replaced with an additional 1 ½ cups vegetable broth)
  • 2 cups long grain white rice
  • 2 roma tomatoes, seeded and finely chopped
  • 2 teaspoons ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon saffron threads
  • 1 cup pimento-stuffed green olives, halved
