Fig, Tamarind & Lemongrass Sauce
Ingredients
  • 3 oz tamarind pulp or purée
  • 2 oz fig
  • ½ oz lemongrass
  • 4 oz orange juice
  • 1 oz white vinegar
  • ¼ cup sugar
  • Salt and pepper to taste
Steps
  1. Place all ingredients in a saucepan. Mix and simmer until it has reduced to desired consistency.
  2. Remove lemongrass before serving.
