20-Minute Baked Pesto Chicken Meatballs

  • 1 garlic clove, grated or finely chopped
  • 1 teaspoon kosher salt, or ½ teaspoon table salt
  • ¼ teaspoon crushed red chili pepper
  • Freshly ground black pepper, to taste

  • ½ cup ( 75 g) dried orzo pasta
  • ¼ cup ( 28 g) sun-dried tomatoes, diced or sliced into thick slivers
  • ¼ cup ( 25 g) grated Parmesan cheese, plus more for serving
  • 2 tablespoons ( 30 g) butter
  • 2 tablespoons chopped parsley
