Overnight Oatmeal Fruit Parfaits
Ingredients
  • subheading: For the Oats:
  • ➡️1 cup old-fashioned rolled oats (uncooked)
  • ➡️about 1 cup of liquid such as unsweetened nut milk or unsweetened coconut milk (sometimes a splash more if needed)
  • ➡️ 2 Tbsps chia seeds
  • ➡️ 1 Tbsp raw honey or pure maple syrup, or to taste
  • ➡️1 tsp vanilla extract
  • ➡️ Optional: protein powder for added protein

  • 2 cups plain Greek yogurt or coconut yogurt
  • 1 cup fresh raspberries
  • ¼ cup raw honey or pure maple syrup
  • 1 cup fresh blueberries
  • 1 cup chopped fresh mango
  • 1 cup chopped fresh pineapple
  • 2 cups prepared overnight oats (recipe above)
  • mint leaves for garnish
  • small pineapple wedges as garnish
