Rip's Favorite Salad with Sweet Fire Dressing
Ingredients

  • 2 cups dinosaur (lacinato) kale, finely chopped
  • 1 cups romaine lettuce, finely chopped
  • ½ cup beets, shredded
  • 1 apple, chopped
  • ¼ cup corn, fresh or frozen (thawed)
  • ¼ cup diced red bell pepper
  • 1 tablespoon chopped and toasted walnuts
  • 1 Engine 2 Pinto Habañero Burger, crumbled (or your favorite, plant-strong veggie burger)
