Ingredients
  • 2 to 4 pounds of skinless chicken thighs (you can use breasts too, but I love thighs for this)
  • Kosher salt, for seasoning the chicken
  • Black pepper, for seasoning the chicken
  • 2 tbsp (¼ stick) of salted butter
  • 2 tbsp of vegetable oil
  • 1 medium Spanish or yellow onion, diced
  • 1 tbsp of crushed garlic
  • ½ tbsp of chili powder
  • ½ tbsp of ground cumin
  • ½ tsp of ground cinnamon
  • ½ tsp of oregano
  • ½ cup chicken broth (½ cup of water ½ tsp of  Chicken Better Than Bouillon)
  • 8 oz can of tomato sauce
  • 10 oz can of RoTel
  • ½ cup of semisweet chocolate chips/morsels
  • 1 tbsp of smooth peanut butter (I used natural, but regular is fine too)
  • 1 tbsp cornstarch 1 tbsp of water, to form a slurry
  • Sesame seeds (optional)
