  • ½ c loosely packed basil leaves, cleaned, dried, cut or torn into pieces
  • ½ cup olive oil
  • 1 tsp Kosher salt, plus more for pasta water
  • ½ tsp freshly ground pepper
  • ¾ lbs brie, triple cream if you can find it, cut into cubes while it’s cold
