Thai Pineapple Fried Rice
Ingredients
  • 3 cups 1-inch chunks fresh pineapple
  • 2 tablespoons lime juice
  • 1 tablespoon pure maple syrup

  • 2 teaspoons grated fresh ginger
  • 6 oz. firm tofu, drained and cut into ½-inch cubes
  • 1 cup chopped red bell pepper
  • ½ cup bias-sliced scallions
  • 6 dried Thai chiles (bird’s eye chiles), coarsely crushed
  • 3 cloves garlic, minced
  • 8 oz. fresh shiitake mushrooms, stems removed and caps sliced
  • 1½ cups fresh or frozen shelled edamame
  • 1 cup matchstick-cut carrots
  • 2 cups snow peas, sliced diagonally
  • 2 cups chilled cooked brown jasmine rice
  • Chopped fresh cilantro
  • Lime wedges
