Avocado Feta Salsa
"A chunky, savory summer salsa that tastes great with pita or tortilla chips."
Ingredients
  • 2 plum tomatoes, chopped
  • 1 ripe avocado - peeled, pitted and chopped
  • ΒΌ cup finely chopped red onion
  • 1 clove garlic, minced
  • 1 Tbs snipped fresh parsley
  • 1 Tbs chopped fresh oregano
  • 1 Tbs olive oil
  • 1 Tbs red or white wine vinegar
  • 4 oz crumbled feta cheese
Steps
  1. In a bowl, gently stir together tomatoes, avocados, onion, and garlic.
  2. Mix in parsley and oregano. Gently stir in olive oil and vinegar.
  3. Then stir in feta.
  4. Cover, and chill for 2 to 6 hours.
