Ingredients
  • 2 to 3 lb pork loin roast
  • 1 onion, all sliced up
  • A drizzle of extra virgin olive oil
  • ½ cup of dark brown sugar
  • ¾ cup of apple cider vinegar
  • ½ cup of honey
  • A splash of soy sauce (¼ cup should do it)
  • 2 tsp of salt
  • 3 cloves of garlic, minced
  • 2 cups of fresh pineapple, diced into happy little chunks
  • Optional: A pinch of crushed red pepper flakes for a bit of spice
